Simple Breakfast Cookies

Ingredients

  • ½ cup unsweetened shredded coconut

  • ½ cup crushed almonds

  • ½ cup brown-friendly keto sweetener (Stevia, monk fruit, erythritol, or a blend)

  • ½ cup peanut butter

  • 1 beaten egg

  • ½ teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350˚F.

  2. In a bowl, add the shredded coconut and crushed almonds. Stir to combine.

  3. Add the brown-friendly keto sweetener and mix with the other ingredients.

  4. Add the peanut butter and stir to combine.

  5. Pour in the beaten egg and vanilla extract, and mix until everything is well combined.

  6. Line a baking sheet with parchment paper or a silicone baking mat.

  7. Take a portion of the dough and roll it into a ball with your hands, then gently flatten it into a cookie shape. Place it on the baking sheet and repeat this step for all the cookies.

  8. Bake for about 15 to 20 minutes, until golden on both sides.
