Fresh Salad with Peppers, Cucumbers, and Strawberries

Ingredients

  • 1 orange or yellow bell pepper, chopped

  • 1 red bell pepper, chopped

  • 2 cups cucumbers, diced

  • 1 cup chopped strawberries

  • Juice of one lime

  • 1 tablespoon keto-friendly sweetener (stevia, monk fruit, allulose, or erythritol), or to taste

  • ½ teaspoon pink salt, or to taste

Instructions

  1. In a large bowl, mix the bell peppers, cucumbers, and strawberries.

  2. Pour in the lime juice and mix well.

  3. Add the keto-friendly sweetener and salt, and mix all the ingredients thoroughly.

  4. Serve and enjoy!
